What would happen if I morphed an Olympic athlete. Would I gain any Olympic skills?

Skills come from loads of training and practice. Sure you would get the in peek condition physical body of the athlete, but you would still lack the experience and training that the original athlete had.

Would I get any of the athlete's "instincts" or "muscle memories"?

An athlete's "instincts" are the same as any other human, breathing, eating, and sleeping. The real talent comes from the training.
