Nobody has any reason to really morph plants.
Fan fic "The Main Course". The Andalite hero morphs into a small house plant several times so that he can be smuggled places in sealed envelopes and a cake.

Yeah, but that's a fanfic. There is no reason in the main series to morph plant.

Plants don't have any of the same features as animals or sentient species. So morphing them might not possible in the first place. And about your logging idea, the animorphs would still have to demorph from them and morph something more powerful.
